A Note on Timing

Dashi(Fish Broth)

Cook time

35 minutes

Ingredients

  1. Wipe kombu with damp kitchen paper
  2. Break kombu into water on medium heat
  3. Simmer 20 mins; do not boil
  4. Remove kombu, bring to boil
  5. Immediatly shock with 1/2 cup of cold water so it is no longer at a boil
  6. Add katsuo, remove from heat do not boil
  7. Let stand 10 minutes or until katsuo sinks
  8. Skim foam do not skip this step
  9. Strain

Miso Soup

Ingredients

  1. Slice tofu into 1cm cubes
  2. Warm dashi almost to boil
  3. Make sure dashi is not boiling, push miso through sieve into broth.
  4. Portion tofu and wakame in serving bowls. Then, add broth
  5. Garnish with sliced green onions, serve

Dashi-Braised New Potatos with Onion

  1. Slice onion into thin rings
  2. Heat saucepan to medium-high
  3. Add oils and onion
  4. Cook until onions just until transparent(this is known as sweating)
  5. Add potatoes
  6. Cook until onions are brown
  7. Add dashi, boil, then reduce heat to low and add lid
  8. Cook 14 mins or until tender
  9. Remove lid and reduce sauce until thickly coating
  10. Salt and pepper to taste, garnish and serve

Edamame

  1. Bring saucepan of water, vinegar and sake to a boil
  2. steam edamame 6 mins or until bright green
  3. season with salt and serve

Teriyaki Mackeral

  1. Bring medium saucepan to medium high heat
  2. Add onions and fry
  3. Season the flour with salt and pepperdo not skip
  4. Add garlic once the onion is transluscent(this is called sweating the onion)
  5. Dredge fish in flour mixture
  6. Add fish to pan and brown both sides
  7. Add soy sauce, dashi and mirin
  8. Cook until the sauce is thick and syropy
  9. Add salt and pepper to taste, lemon and serve
